I think there's more going on than just saturated vs unsaturated fat, and sugar. Mcdonalds patties are made from reconstituted meat. As well as it being a mix of various beef components that you wouldn't normally cook yourself, they adulterate it with vegetable oil.
It makes these discussions about impossible burgers a bit funny. The beef patty from the main burger chains are not that far off from an impossible patty. You're just being treated to a small amount of beef sludge instead of whatever they substitute for that in an impossible burger.

sugar is poison. your body wants to stay in homeostasis, that is it wants a stable blood glucose level, regular sleep cycle, and other markers of healthy and stable living. when you eat sugar, you blood glucose levels skyrocket, then the pancreas needs to produce a fuckload of insulin to bring them back down. insulin is a fat storage hormone, so it takes all that excess glucose out of your blood and stores it as fat. most everything you eat will produce an insulin response, it's a normal part of digestion, but it becomes a problem if you're provoking a response multiple times a day.
