Everytime I soaked in milk the liver tasted sour and shitty. I tried just blackening a shitload of onions with butter salt pepper and garlic, threw the liver on there long enough to be the equivalent of a medium done steak and it was no longer bitter at all. Fuck milk
I melt butter in a pot, get it bubbling, cut the liver into strips, and boil it in the butter. I don't cook it until it's dried out either. I cook it from frozen or extemely fresh if it's from a deer I've killed. It tastes great this way. Of all the organs liver is the one people have a hard time with. Kidneys, lungs, heart, properly cooked blood, stomach, it all tastes great but liver will always taste like liver. I love it but for some people it should be more like taking a vitamin rather than a meal.
I get a pan great with beef tallow hot until the grease shimmers. Then I slap the sliced, salted calf liver into the pan. In the time it takes to salt the other side and debate if I'm pulling the trigger too soon, I see doneness creep up the edges of the liver and I flip it. It's on the second side a little less time. This is a pretty rare slice of liver but I find the texture and flavor best this way - milder, the only sour and iron flavors are where it was cooked. But it's never been cold in the center for me this way. If you want more sear on the outside but the same doneness, start with frozen liver slices.
I have been a cook, you can saute with onions and garlic, minced chili pepper sauce, pomenegrate molasse and chopped parsley as topping. Eat with a breadroll for some nice carbs and you’ll have a delicious breakfast.
