Milk, milk products, and eggs are going to be your protein sources. Beans are shit for protein. Not only is bioavailability low, beans have isoflavones which mimic estrogen in the body. Soi is the worst offender so quit eating edamame before you start getting gyno, but all beans have them. You're sabotaging yourself with bean protein. If being a veggie is that important to you then you're going to have to GOMAD or start eating at least 6 eggs per day, with cheese just to hit your minimum 55 grams per day so your muscles dont atrophy. Then you're going to need to pack on a lot extra to get 130-160 grams

Try Seitan. Fry up a few slices of this with some veggies and teriyaki sauce and if you do it right it has a taste and texture almost like steak. You've also got other dairy like cottage cheese and yogurt and you could add fresh fruit to make it special. Get some nuts and add them to oatmeal or hot cereal. There are so many options for vegetarians out there. You just need to get more adventurous in the supermarket and spend some time cooking.

You can go full vegan and have no problem with protein. Bioavailability is smoke and mirrors to sell more meat, it's meaningless. There have never been vegans filling hospitals because of protein deficiency, and no clinical trial shows they are deficient, quite the opposite because meat protein is in fact inferior to humans, causing inflammation and aminoacid imbalances such as excess purine in blood leading to gout and kidney damage. Meat-induced inflamation also hampers protein absorbtion which is why vegan biopsies show denser muscles whereas meathead biopsies are fatty.

Yet there is no epidemic of protein deficiency, nobody is ending up in hospital because of protein deficiency let alone dying from it. While some low bioavailabities are obviously bad they aren't necessarily as low as you think they are:
The low bioavailabilities usually come from limiting Aminoacids in the amino acid profile of certain proteinsources.
This can lead to higher bioavailabities if you mix your proteinsources up and eat different meals or well rounded meals, if you pair for example a food that has the amino acid lysine as the limiting factor (typical for vegetables or wheat), but has other essential amino acids in a higher concentration and another food that has cysteine, methionine (either of the 2 sulfur containing amino acids) or tryptophan (typical for legumes like lentils or edamame), you can get better bioavailability for the whole meal, then for the single compounds.
if you want to look this up you can look up essential amino acids or try to get some further background in the biochemical, nutrition or food chemistry books.
tl;dr low bioavailability isn't as bad as it looks if you get protein from different sources (lentils + dairy + vegetables; not 3 types of lentils nothing else).
