I was going to post a photo of a fat garden gnome, pretending to be OP and replying with righteous indignation for a joke, but you can't google "fat garden gnome selfie" and get anything other than photos of some gay rapper influencer who calls himself "The Fat garden gnome," and almost nothing comes up when you sort by copyright for creative commons. Yet when you search any other race/ethnicity plenty of ugly fats come up. What gives?

Use both appropriately. Butter is for cooking at lower temperatures, olive oil at higher. Olive oil generally goes better on salads, butter goes better with mushrooms.

I switched to butter exclusively when cooking. Far better results than olive oil. I fell for the "burning butter" garden gnome meme which is why I was using oil for my steaks. All you have to do is put the butter in the cold pan before it's scorching hot, and it won't burn before you put your meat on. You get a much nicer sear with butter and there's none of that nasty flavor you get from oils, not to mention butter doesn't oxidize like oils.
If you need to take it to higher sustained temperatures you can just clarify the butter. It's the milk solids that burn and they also conveniently settle to the bottom when you melt the butter.

I make my own butter from raw jersey milk from a local farm and I make skyr with something like 15g protein/100g out of the leftover skim milk.
