I watched a zoomer sumo deadlift 2 plates today then set up for 275 four times without ever actually attempting it, then went down to 245. Fucking kek. Just do it pussy. A long rest is perfectly fine for a heavy set but fucking do it

Set the safeties so that if you fail you can just crunch down and let the bar roll off your back. If you can literally just set the bar down on the safeties then it's difficult to be afraid. Try actually setting the bar down with a little weight on it, once you know you can fail without consequences your nerves will vanish.
If you don't like squatting or don't have to squat (ie. you're not a powerlifter), don't do them? There are many other ways to build your legs.

Get confidence in your technique and learn to enjoy the feeling after you squat. I don’t like squatting, but I love the feeling of weightlessness and useless legs after squatting so I keep chasing it
I love leg day I can squat a lot more than everyone else who's in my gym at the hours I usually come by so I feel like the big guy even though I'm only 200lbs at 5'11.

Resting for 5 min between sets of squats is perfectly normal. 2 minutes is definetely not enough if you're pushing yourself hard.
I embraced it by stopping squatting. I go to the gym for fun and I don't do exercises I don't enjoy.
am I the only one that actually enjoys squatting? its a fucking badass lift and you can watch yourself the entire time unlike benching where you get to stare at a bar for 30 seconds
That happened to me before I built a power rack because sometimes I stumbled but still managed to regain control of the weight without falling and decapitating myself.

lower the weight, you are likely doing some rippeshart program that calls for unreasonably high intensity
good programs wont have you doing sets of 5 at 9-10 RPE every day, because its not sustainable and causes a ton of fatigue
