Are you trying to highbar or lowbar squat? Ankle mobility shouldn't be a problem at a parallel low-bar squat.

consider doing body weight squats while using a chair as support until you get the form well enough that you can do barbell squats. no the leg press cannot replace squatting.

You can do your whole routine in 4 days instead of a week.

Do split squats with dumbbells' but make sure you are going heavy, they are just as effective at building leg strength as squats and stay in the 4-8 rep range. Leg press doesn't quite match squats.
Try to build the flexibility to do squat (which is likely the problem). Try doing squat and go to the deepest point possible before your form breaks, use light weight and hold it there for 2-4 seconds.
How do you know if your form breaks? The bar path while doing squat should be in a straight line. If you find that the bar path goes forward or backwards when trying to achieve depth, STOP. You don't have the flexibility to go deep and you need to improve it.
