Does being shredded improve your odds of nailing a job interview?

I think it probably does, as it shows discipline and drive. It won't get you the job if you're under-qualified though, but will put you above equally qualified candidates that are fat.

Can they really tell the difference if you have a suit on?

You can tell if someone's fat or not even with a suit. Almost everyone looks DYEL-lean under one however unless you're a mass monster.

Looking put together and fit is a massive plus. Your bosses will want to be around you more, interviewers will take greater interest, senior leadership will have a positive impression of you.
The financial and life benefits cannot be understated - why do you think Bateman cared so much about his looks?

    No.
I work in a hospital; been applying for an advancement. Last four phone interviews went well. The in-person interviews I thought went well but was turned down.
Asked for a reason from two of the departments' employees. They said the nurses and admin were really intimidated by my height and muscle mass.

Intimidated means they knew you were going to either be a magnet of their attention, or they knew you'd be fucking all them nurses.

One thing I have noticed in the white collar workforce is that the lower level staff are more into lifting while the managerial folks trend towards running/swimming/other cardio.

My theory is that being too big makes people think you’re a dumb oaf so shredded people probably don’t get the benefit of the doubt with promotions. I would imagine it’s the same in regards to interviews

also, similar activities means more networking. if the bosses run, you can go run with them. you cant exactly ask your boss to spot you. who you know makes the world go round, no way to escape

I think it does, just on the psychological basis that physically attractive people are more trusted and liked

Being fit and good looking does for sure. Being a roid chud does not.
If roiding advised you have your own business.
